West Indian GherkinOn Curaçao, the West Indian Gherkin is known as Komkomber Chiki (small cucumber). It is indeed related to the cucumber and can be found all over the Caribbean. Here, it is mainly used in stews, but it can also be pickled, cooked or eaten raw. This is one of those Caribbean vegetables that when you see it at the supermarket you have no idea what to do with it. That is why we are going to create some new and tasty recipes with this cute-looking vegetable!
