When I was in Trinidad last year, I noticed that the Trini’s use lots of fresh coconuts in their dishes. While we have plenty of coconuts here on Curacao, I don’t think I ever saw anyone using them in the kitchen. Besides drinking “coco friu”, lovely fresh coconut water from a green coconut, we use the canned stuff for cooking.
Products like coconut water and coconut oil are ranking high on the superfood-lists. So I think that the coconut, that is so readily available, cheap ánd healthy, deserves a little bit more of our attention. Starting today.
First things first. How do you open the damn thing?
It is actually quite easy. Hold the coconut in one hand and gently hit in the middle of the nut with the back of a meat cleaver or other heavy knife, while turning it. After about 30 seconds of hitting and turning (and with a bit of luck), it will split open right in half.
Before you do this, you may want to remove the coconut water. Did you know that every coconut has 3 “eyes”, of which 1 is softer than the others? Take a close look and you will see what I mean. You can easily pierce the soft eye with a skewer or screwdriver to make a small hole. Add a straw and there you have your fresh coconut cocktail!
