Sweet Potato Pancakes



  1. In a bowl, whisk together the flour, sugar, baking powder, salt, ginger and cinnamon. Add the eggs, buttermilk and butter and whisk until just blended. Fold in the sweet potato.
  2. Heat the butter in a frying pan over medium heat. Ladle about ¼ cup of the batter into the pan and cook until bubbles have formed on the top, about 2 minutes. Flip and cook until golden brown on the other side, about 1 minute more. Serve immediately topped with the honey-cinnamon butter.
