Scotch Bonnet peppers are hot! They have a heat rating of 100,000-350,000 on the Scoville Scale, whereas jalapeño peppers only have a rating of 2,500 to 8,000. But don’t worry, you can reduce the heat by discarding the seeds. Ripe peppers change from green, to yellow, to orange, to bright red.
Scotch Bonnets are found all around the Caribbean and are used as a base for jerk seasoning and many delicious hot sauces. They are similar to, but sweeter than the habanero pepper and Madame Jeanette pepper with which they are often confused.
