We have been a guest-blogger for the ladies of Veggie Kidz for some time now.
Their colorful Veggie Kidz cookbook was published in 2014 and was recently elected as the no. 2 vegetarian cookbook of the year! The book is filled with healthy (but fun) recipes for children and cheerful pictures. Don’t let the “vegetarian” part scare you. Even if you’re not a veggie, you can easily find a delicious recipe for a meat or fish-free day.
I am having great fun creating healthy kids recipes with a Caribbean twist. My last recipe was for a Caribbean version of one of those kids classics: ‘poffertjes’ . With the use of wholewheat flour, roasted pumpkin and fresh blueberries, I managed to turn this old-time favorite into something tasty ánd healthy. My 3-year old daughter loves them! Another of her favorites is the Sweet Potato & Carrot Soup. I have not posted the recipes here as yet, but you can find them on the VeggieKidz blog.
